Pinterest Find: Banana Muffins

Sometimes I come across a recipe that is so easy and so tasty I make it again and again. This recipe I found on Pinterest for Banana Muffins. I have lost count how many times I have made this. I have made only a few very slight changes to the original recipe and they always turn out delicious. This is a fast muffin to throw together and a great muffin to have with breakfast or to send along for a mid-day snack.

Last week were were ensconced in the second week of the flu and other crud. I was finally hit with it last week and my husband was down with a double ear infection and who knows what else. Ironically, the kids still felt they should eat and I manged to keep them alive during my infirmity. Last Friday the oldest two went to stay the night with their cousins and I needed to make sure there was something for my husband to eat when he took his medicine. Lo and behold there were plenty of over ripe bananas sitting on the counter so I washed my hands and pulled out my trusty Banana Muffin recipe. I am telling you, if you are standing there with body aches and a fever, go back to bed, but if you have to prepare something, this is the recipe for you.

I will let you link over to the original blog for the recipe. My only changes are that I add an extra banana or sometimes I will grate in some carrots plus I will add a dash or two of nutmeg because I love nutmeg.

I can usually get 20-24 muffins out of this recipe. It is rarely the same count. I'm not sure why to be honest but I will say these are some of the tastiest muffins ever. My family loved banana bread before we went gluten and dairy free so this is a real treat. The muffins are fluffier than a banana bread loaf but still delicious.

This recipe is gluten, dairy, soy, and nut free. I have not tried to make this recipe egg free yet.
